Unclosable Dedicated Server Window

I've been having trouble hosting my dedicated server because my roomates use my computer and sometimes they close the window.

Is it possible to make a window only closable with task manager?

No, it's not. An option would be to create separate user accounts on the computer and then simply switch users.

I thought -noConsole would do this but that only works for the game, not the dedicated server.

Yes, and make sure you use switch users rather than log out.
