Audio won't be different, you can just claim it was you guys impersonating it.

Depending on the state, audio recording might fall under wiretapping laws. Seriously, even in public - you can't legally record audio without the OK of the person you're recording.
Video or images is allowed, provided you don't use it for commercial purposes and no one flat out says "no."

I think it's ridiculous that countries try to limit educational opportunity based on social status.
That is essentially the root reason and end result of all these "anti-filming" laws for school classes. They don't want people learning who aren't in the stupid classroom because they can't afford it or can't physically access their own tuition.
