There is likely not much blood, but there are a number of other fluids which still exist within which are also red. Not to mention blood clots are common to be found, and small amounts of blood and other liquids can be squeezed out of the heart tissue.

But there would never be loads of blood in it, unless it was literally just cut out from a live donor moments ago.

Oh, well if it's just fluids then that's normal. I've dissected a fetal pig bottom to top before and there was no blood at all.

There was a bit of blood mixed with water (we washed the hearts first) and one of the non-bright guys decided to squeeze their pig heart...
