That's what I always did. Those guys hit hard with all the damage upgrades. Harder than any other infantry that I know of.

I love to make a giant area filled with trees. The enemies have to dig their way to each other. The set up of that kind takes a bit time to your battle, but its worth the fun.

I would always use catapults to clear a large area in the deep forest and then build a city in it.

I barely used these units based on the fact that they are slow and expensive if I recall correctly.
But yeah those guys did quite a bit more than Jaguar units. Not as easy to stack though. You could easily get a few armies going with the jags.

Also..

The Aztecs' Jaguar Warrior is a match for them as well, though it depends on who strikes the first blow (with Garland Wars it can defeat Teutonic Knight easily).

Yeah that would probably work.

Another tactic I used to use is building a stuff ton of those cannon towers with the Spanish. It always seemed to really piss off my friends if I used that against them.
