The reason being that if that single stick of ram arrives DOA you are out of luck until they send you a new one, at least with the 2x4 option you have the ability to work with one stick while sending the other back. Performance wise it makes no difference.

Actually dual channel mode runs faster than single channel mode. Something about increasing the speed memory accesses the chipset
