I'm buying all new parts except for the hard drives.  Would someone be so kind as to let me know if there are any compatibility issues or if I'm wasting my money on something?

Yes, it's MUCH cheaper to just do that.
Stock cooling could handle that. I have a Core 2 Duo 2.66 GHz overclocked to 3 GHz and it runs under 65 degrees at max.

The graphics cards is alright but with an i7 system you might want to shoot a little higher.

Also, the atcs is 840 isn't the best for aircooling. The Antec 1200 and the HAF 932 own that.

The thing is, I don't want it to be too loud.  My mom sleeps in the room right next to mine and the fans in my current build make quite a bit of noise.

Is it the kind of computer you have to stare at for 24 hours and get glasses cause of it?

spending the xtra 10 dollars per fan can buy you better quieter ones.

Updated with the i7 920 and the black HAF.  My plan with the GPU is to buy a second one down the road and SLI them.

What is your current budget? If noise is a problem the HAF and 1200 sound like airplanes taking off. You might want to consider watercooling.

I'd like it to stay around $1k, but I guess I could shell out a tad more.

For air cooling, definitely get the Xigmatek Dark Knight.  Make sure it will fit in your case first.
