These aren't commands but are formatting placed in text strings, much like BBcode. It's called TorqueML.

Changing font:
<font:fontname:size> Maximum size is 60. Default font is Palatino Linotype.

Changing color:
<color:hexcode> Changes the font color using hex color.

There are many other TorqueML commands but those are the most common and most useful.
