Personally, I would only use props, If I couldn't build what the prop is representing.

But they actually serve a purpose whereas props are just that, props.

They're an accent. You could use a plate prop in place of a flat 2x2 round, because flat 2x2 rounds look like stuff in their place, and some people can't even tell they're plates.

No, really, I like props for their level of detail that you couldn't achieve with bricks. Overusing them can be annoying, but anyone that thinks props suck can eat stuff.
