Nodes. A RTB pref that hides the eye shape nodes when the player spawns. That way, you wouldn't need a second model or extra datablocks.

I have always wanted dragons with eyes. If you have to, make separate versions or if you're so obsessed with blind dragons, make a new cave dragon that has no eyes.

Honestly, the flying ones especially look bad without eyes. The land ones, I can live with.
