Which is the default for people who join? Guest would be quite annoying because you would need to repeatedly change everyone.

Writer is just an extension of guest.
It's just another rank and kind of like an admin, without the ability to ban or kick or unban etc.

A writer is just author level you can promote players to with a different set of permissions you can set.
For example, all players coming into your server spawn as guests, you can set guests to not be able to build, let writers build, then promote those guests you feel you trust and let them build.
