So I want to build a computer, but I don't really have, uh, any experience with computer internals. I've watched quite a few videos on how to build a computer and I'm confident I could do it, but would it be a good idea to pick up some really old computer for cheap somewhere and disassemble/re-assemble it a few times to get comfortable? I don't have all the money I need to build one yet anyway, I'm going to wait til I have $1100-$1200 probably.

That sounds like a plan.

Older computers won't be the same. They'll be missing some minor parts (SATA) but it will be the same principle.

It isn't rocket science, you screw in the motherboard, screw in the power supply, snap on a few things, and plug in a few cords. It's like a 5 minute process.

just buy a static wrist trap thingy to keep you grounded and you'll be fine.

I always watch my dad build computers, but you have to be a bit careful.
