taking into account the gaps between season 1  and 2, they probably made a forgetton of episodes during that gap

there's no way they could animate and voice that stuff in a week and still sleep

an episode is finished at least (and im quite sure thats stretching it) a couple weeks in advance.
generally they have a number of episodes completed before a season even begins.

I thought she just took a step down from her former job in it.

She's a consulting producer, the most she does is answer questions the team may ask her.
She really doesn't do much for the show at this point.
