Cadence has a really bad tan going on there while Rainbow Dash is looking a little pale and Applejack is missing her hat and maybe her freckles

The only good looking ones are Granny Smith, that gryphon character i don't care for, the Wonderbolt, Shining Armor and Cadence, the face of Twilight, Big Mac, Applejack and Rainbow Dash look odd and maybe inconsistent with the others

i don't think Twilight, Applejack, and Rainbow are getting changed, I think they're just there for placement/sets. Rainbow + Gilda + Wonderbolt is a group (Raindow's Friend group?), the Apple Family group, and Twilight's Family group.
