Is green the most appealing to us because the word matches its color? Or some other kind of psychology thingy?
It's anatomy, psychology, and personality.

So far, as already known, green-coloured words are preferred since the eyes absorb them easily. Mouse may be most popular because it's an animate object or because lighter colours are more easily absorbed, or both.
White may be most unpopular since it's black when it says 'white', causing a logical error, and black is the normal colour for text on computers as well, and of course the two others that catch your eye since they're green. People may prefer the black or white over the others.

HOWEVER, generally, people's eyes can just settle on the middle of a set of things, that bit is used to set up restaurant menus a lot.
