Depends on what I am talking about to me saying a gray house makes more sense than say a grey house, while saying grey hair makes more sense than gray hair

Both are acceptable, just as should be the spellings of words such as color and colour. Just be consistent in your writing to avoid ambiguity.

I prefer gray although it's incorrect in NZ.

Metres is some odd way of spelling it, but I occasionally use it because I'm a massive richard.
