Allows you to customize and add utilities that the apple app store doesn't have/allow
But like for me I'm jailbreaking for the insomnia app to keep my iPod from disconnecting from the wifi and jacking with my messages

I don't believe it will. But make sure you have everything backed up just in case.

Also, there's no untethered jailbreak yet, so Everytime you need to restart your phone, it has to be plugged into redsn0w
