Most of the people are Confabulations. You can't really interact with them. Dr Verton doesn't remember what they really looked like so his mind has filled in the blanks with people that are currently alive today. The fact that they are confabulations allows you to interact with his memory the way you are currently without causing it to stop due to being interfered with.

You cannot erase memories here. You can Erase Memories in the MEMORY ANNEX. The Dream Plane can only project them. However you can stop the dream from projecting the memory by "desynchronizing" it (like in Assassin's Creed. Do things that never happened in the memory and it will break.)
