i think it was russia and the united states having a nuclear war that turned simon into the ice king and basicly destroyed the world.

basicly the fish people are humans that adapted to darkness and water after the land was nuked to oblivion and Finn is the only "human" left on the face of the earth, Ice king too if you count human mutations from radiation posioning

I think you're right on the fish humans and I did watch the episode about ice king being "mutated". I suppose that's where he got his special ice powers. But I am not so sure about russia and united states. but if you read the wikipedia about the mushroom war, it is talking about how a part in asia is blown up, which is supposedly russia.

yeah, adventure time implies some pretty creepy stuff, such as some episodes where finn travels to the urban area, and there are a bunch of destroyed buildings and skeletons on the ground. and of course the mushroom war, or nuclear war.
