Science, Discovery, and History are alright.
History is perhaps the stufftiest thing I can think of on TV.
There's no History actually on it.
Instead it's constant programs where you watch hillbillies and handicaps scream and shout at each other while acting like the stupid, and often unnecesarilly dangerous jobs that they do are in any way useful to the world.
I would have to agree with Littledude.
Personally, I don't know any one my age who watches Cartoon Network or Nickelodeon or similar cartoon channels. Some watch things like Family Guy, South Park and the Simpsons, but not much more.
I don't know any one in real life who actually seems to want to watch all the old childrens shows from Cartoon Network. I've only ever heard of it online.
Anyway, if you stepped away from those channels you might find other stuff more entertaining.
Drama's, Sports, News, Documentaries, Soap's, and even reality shows can be interesting.
I'd recommend a number of the different shows that HBO have produced. A lot of the ones I watch are older, and likely not aired so much in America anymore, since they're only just becoming available in the UK, via HBO's deal with Sky, to make Sky Atlantic. But they're still remarkably good.
Game of Thrones, The Borgias, Dexter, Six Feet Under and Big Love are just a few that I've watched recently in the past year that I've enjoyed.
If you look further for more shows you'll find more things you enjoy.
