for some reason im really self conscious about watching stuff like anime w/ my parents home, and i think multiple bronies can also relate to this because its a children's show, anyone else having this probleM?

only if the anime is very gruesome (< not so much) or contains nudity and i know it does, my parents flip their stuff out with that stuff
otherwise, not really. they don't really bother me when i'm in my room unless they need help with something, so privacy is not an issue.

still, i am not nervously self-conscious when it comes to watching things.

I'm quite open about my anime watching, my parents seem to think its perfectly normal for their son to be into these foreign cartoons. They also seem to like it better than most of the stuff on tv these days,
