I can never connect to those servers, although 4 or 5 people may actually be in that server. If I knew why the ping is --- I could try work out a fix for myself.

It means you do not have a connection to that server or the server does not have a connection to you. There are rare cases where you can connect to --- servers. If there are 4 or 5 people in them, it could have recently crashed and the master server list just hasn't updated since then.

So, how would I create a said connection to the server?

normally the server was recently shut down if it has players and like Pass said the master server hasn't updated the list yet. so, really there isn't

You don't connect to them. If their ping shows up as "---" it means there is no connection from them meaning that they shut-down the server but the master server still sees them and displays them on the server list. You don't "create" a connection with them and connect. The server is simply dead.

But I don't get it, my server is up, my ports are forwarded correctly (I'm quite sure of it), yet my ping is displayed as ---, some people can join and others can't. Any ideas?

Even though your ports are forwarded correctly and all, it's just that people may have a bad connection to you.
I almost have the same problem, but I don't think my ports are forwarded correctly.
So in that case, many people aren't able to join my server, but the people who could just have a good connection to me.
Since your ports are forwarded correctly, then you should be able to get many people on your server. (Way more than me)

I live in ireland. But I've been able to host servers with tons of people (30-40 people at times) before. Why should it stop now?

Hm. Maybe your modem or router is messing up
or the wires are sorta unplugged?
