When the teacher says "slow down" they just want to make sure that you have received all of the material. If you believe that you have gotten 100% of what has happened, you can just say something along the lines of "I'm a fast reader. I can summarize what has happened if you would like." (But make sure NOT to sound like you are one-uping them. They HATE that!)
The same problem with "methods" comes up with many different schools, happens to me all the time. They are preparing you for the future of note taking. A certain teacher may follow a certain method. Say you are in physics class and your teacher is really strict about how you write down, so that if you have a test on the material you had learned in class, and the teacher creates questions based on, and uses, their method, you will know the answers. I know it is frustrating, but if a teacher says that you should use their method I highly suggest you do, as it will help you in the future. c: good luck!
