The answer is simple. Poison. Some poisons can kill in seconds and it would be extremely easy to stealthily poison the target's food or drink. The only possible problem would be if the police perform an autopsy and find traces of poison in the target's blood or whatever, but I'm pretty sure some poisons leave no traces.
