It depends on the server, the host and their ability to roleplay(in which most of them are stupid idiots who roleplay as in family RP) and the people playing the server.

Roll playing servers are usually just a bunch of players in a random server doing random things together, playing, having fun

Some rp servers are good, then some are bad like the love rps most likely youll find more rps than other servers at some times, or none at all.
And worst of all, when you go to rp servers its complete chaos! (Some of them.)
