I love barbecueing food with charcoal. Gives meat that nice smokey flavor. I don't use lighter fluid either, that stuff ruins the flavor.

I use a metal chimney and let the bottom coals grey up, the upper coals are slightly grey, but mostly black. Also I use newspaper to get the coals burning.
