How much land should I be giving out? The whole country? Because I don't want somebody becoming Russia (totally not thinking of you mikoyan...) and taking over half of the whole map.

You misunderstand the fact, russia doesn't exist in this RP, so if you want to make a russian clone you've gotta build up to it, not just have it. Anyways, I may join this and attempt to actually stick with it for a while, but not too many promises can be made.

See the modern Poland in the background?  I'm asking for that, not the enormous power that Poland-Lithuania was in medieval times.  So if you are giving me ¹/₄^th of Poland in medieval times, you might as well give me the modern Polish territory, since that's about a quarter of what it was compared to then.

And if you haven't noticed, not too many people join these things, so giving me that land is both generous and conservative.
