fair use is a defense. if someone requires you to take something down that you uploaded, because of copyright infringement, you can use fair use as a defense and possibly be allowed to keep it up. however you can NOT use it as a defense if you were making money off of the video. and if youtube wants to remove a video of yours for any reason AT ALL, they can do it, they don't have to abide by any laws, because you uploaded a video on THEIR website

Except they are violating the FAIR USE law. Why are you trying to defend them so much. They are stepping out of bounds in regards to this. The reason why they are getting so much backlash to begin with.

Vimeo would be a good contender if their buffering wouldn't be utter stuff. It takes several minutes to load the entire video even with a 100MB connection. If it loads at all that is. It's always faster for me to just download the video file rather than patiently wait for it to buffer.

you don't need citation to understand that they wouldn't add more rules if everyone followed the rules already in place

They were too lazy to patch up the hole that some developers exploited (copyright claim top video if he said bad things about their game) so they made it copyright claim everything automatically.
