Let it snow is nice

Some religious ones are nice too

The ogg loop from blockland

Little Drummer Boy, absolutely. It invites people who are covering it to give some kick ass drum solos :)

I couldn't figure out favorites, but here's some stuff:
Hanukkah, O Hanukkah: http://www.youtube.com/watch?v=ifUO0iTrxqg
Jingle Bells: http://www.youtube.com/watch?v=znm9swZPmBo (Skip to exactly 1:45 if you want the good part. The opening and closing are just for... effect.)
Chiron Beta Prime: http://www.youtube.com/watch?v=qjgctnX3fbw
The Night Santa Went Crazy: http://www.youtube.com/watch?v=cSs3FyeThM0
Christmas at Ground Zero: http://www.youtube.com/watch?v=t039p6xqutU (Before the general term became a proper noun)
