particularly for example how it's impossible to entirely disable categories, Keep/Hangouts integration (I use those, but I don't want them mixed with my email) and such

And then I have an AOL account that mostly just gets spammed with notifications from these forums.

Google seems to be really good at searching, managing a video service, email service, map and navigation service, entertainment platform (except for some localization bs), social network and a forgetton (I'd have to add at least 100 more commas if I wanted to come close to everything) more. I don't know where you're getting "two things" from.

My parents got me to use Earthlink but I have a Gmail and Yahoo I never use

you mean the tabs? you can disable those..?
