The vast majority of Tyranids do not use host organisms. At all. Ever. Saying Tyranids are parasites is loving moronic, considering 99.9% of all nids ever are not.

Assimilation =/= parasitism. Unless there is another organism actively benefiting and harming the host organism it is not parasitism.

First off, you're wrong because symbiosis is the blanket term which includes parasitism, commensalism, and mutualism.
Secondly, what the Tyranids and Zerg do as a whole isn't any form of symbiosis. Here's why: They don't have a host. Hosts tend to be pretty forgetin' vital to symbiotic relationships, because that's what makes them symbiotic. (note that symbiosis is really just a close and often long-term engagement between organisms of two species.)
Here is what symbiosis is:
Mutualism: Clown fish and those poison-ass anemones or whatever. Clown fish clean out the things and in return the anenomes don't loving turn clown fish into lunch. Both parties benefit.
Commensalism: A flower is latched onto a tree and saps a very small amount of water from said tree because I guess the ground just isn't good enough. Flower benefits, tree is unaffected.
Parasitism: A tapeworm decides your gross ass is a fine place to settle down and begins displacing organs, because tapeworms are loving huge, and consuming a large amount of nutrients. Tapeworm wins, host loses.
Notice how a grand total of none of these sounds like what the Tyranids or Zerg do?
