I once got confused when my mom pronounced it Berenstain, because I'd always heard and said it as Berenstein.

This is very simple to explain. As a kid, when you read these, you had worse memory than you do now. Now, your brain can't really fully remember the name of the book, but it was close to Bernstein, and Bernstein is much more common than Berenstein. So, it creates the false memory of "The Bernstein Bears"
