you can make anything with rice; asian, indian, mexican, cajun, whatever

This is a good point.
Look at your local supermarket towards the end of the day and have a scour for reductions on fresh food.
They get reduced daily and sometimes by significant amounts. You can't plan ahead for it, but you can get good food at a great price.

the grocery store i work at sometimes at the end of the day gives away cakes that expire on that day.
its rare though and im not going to count on it

Kale and beans
Just sauté them with some garlic and olive oil. Cheap, quick, easy.

Ramen never leaves me feeling full. :(

Depending on what store you go to (I used to work in a large grocery store and they were this way), these grains may only be available in organic options, which are jacked way up in price

get some cream of wheat

when i make rice, i like to add some butter, soy sauce, onion, and pepper. sometimes instead of all the seasonings i'll smother it in cream of chicken soup, then dump some creole seasoning onto it and mix it in real well.

red beans and rice is cheap and decently healthy

Rice, oats, noodles, bread.
It's easy to eat cheap as long as you can survive not having overly delicious meals.
I bought a bag of oats a while ago and would just stir them up in my cup with free hot water for a meal. Beggars can't be chooser y'know.

Carolcat also reminded me, you can get basic soups pretty cheap too.
And supermarkets often have them on sales.

If you're truly desperate you needn't even cook them.
But you will need a can opener or a good knife.
