LG has a great developer community, too. Cloudy keeps his Stock roms well set up, so if you don't want that G2 UI then you can swap it for a G4 UI with G2 software features.
AOSP roms are good, aswell. I run SlimSaber on my phone with no trouble. Beware, though as some panels might cause a white screen issue, so check what panel you get before you do any software things

The Lollipop version of the G2s software is actually quite nice, too. It's not that different from stock, with just some a some mostly useful features added.

Stock is a bit slow, and battery takes a massive hit from it according to others

buy the latest phone that will go out of date in 3 months

sign up for Google Fi, cancel AT&T if it happens, get a Nexus 6 for it

I haven't noticed it be slow, and my battery is easily getting me through a full day, with battery to spare. It could be different for others,  but it's fine for me.

I don't think his girlfriend is going to want deal with custom ROMs and rooting and all that crap.
