I'm assuming it's another accessory you can customize you keyboard with: stiffness/softness, sound, lights. I have a standard keyboard and this is the first time I've heard of... keyswitch models.
Sounds to me like something the same people who bought a custom gaming mouse that lights up and has a numpad on its side would enjoy buying.

Next I'm gonna hear that changing out your stock keyswitches will enhance reaction time by some odd milliseconds giving you a serious edge in hardcore gaming, right?

if a certain type of key/switch has less depth/resistance to register, don't you think that would make a difference?

It's mostly a feel thing, many people prefer the feel of mechanical keyswitches (less mushy, crisper, and they'll last ages longer than rubber dome keyboards), and if you have a soldering iron and a lot of spare time, then sure, you can change keyswitches on a mechanical keyboard, but nothing will change that attitude of yours.

you can't change out keyswitches on a non-mechanical keyboard but even on mechs it's really hard because you have to desolder each individual switch and solder new, possibly more expensive, ones in

also it's not an accessory because it's part of the keyboard

it's because people who are into mechs and such don't just buy a random keyboard
they actually look at what switch they're getting and how it will feel/sound
a lot of mech enthusiasts/fans will do a lot of research on these
