Sure, some people could take minor annoyance for being called Mexican when they're actually from another Spanish-speaking country, but honestly. It's a stereotype. Stereotypes can be gotten used to within a month's timeline, even if it affects you or your ethnicity/culture/language etc. Just ignore it, and act like nothing happened, she'll get over it. That's my opinion.

it was a small mistake, it's not like I told her she's useless and should die, I just used the wrong nationality
