I think it's almost too carefree to call a sub a sandwich.
It's almost like calling a baguette or a panini a sandwich. I think to classify any 'item between bread' as a sandwich is to sully the good name.

IMO, it needs to be two seperate pieces of bread cut from a square loaf, with something inbetween.

Hmm. Maybe a better requirement is that the slices of bread are cut vertically from a loaf.

A sub doesn't count then because it is a horizontal slice.

But I suppose I wouldn't really call it a sandwich if it's in a roll. I just call it a roll.

At any rate, if you're cutting through it almost all the way, you're still trying for a sandwich.
A hot dog bun isn't always cut all the way through, and generally they are held differently, with the opening to the filling facing up. Whereas the 'openings' on a sandwich face horizontally when you eat it.

I'm seeing a lot of pictures that show it made with two slices.

I think the one-slice is just a variant. I'm afraid it doesn't qualify as a sandwich by my books.

I give an open-sandwich a special case. It's not technically a sandwich itself, but a dissection of a sandwich. Were it to be reconstructed it would be a regular sandwich.
If anything, it's a different means of eating a sandwich.
