I always used the block kart

don't all of the karts have the same stats, making it really just down to your personal tastes and preferences?

iirc all of their collision datas are different. I remember getting the front thing of the Formula stuck on a ramp many times

I think either Blocko or Jeep kart is. Don't quote me on that though.

The reason I like buggy tho is because it handles rough terrain relatively well

It's your opinion, but I want to make sure it's small enough so I don't get stuck on ramps. The Buggy is off-road, though.

Actually all of the SpeedKarts have the same collision mesh, the thing that makes them feel different are the positions of the wheels which can affect it's perfomance on the track, so you can consider the karts having different "stats" based on that alone.
