Cool things to do in New Zealand?

So next year my GF and I are planning to go to New Zealand for a two week holiday in Jan. We're going to hire a car and work our way down from Auckland to Queenstown, hopefully doing various cool things along the way.

Anyone live in/been to New Zealand that can recommend places we should stop or things we should do?

Visit Hobbiton. Also, not sure, but I think Weta Workshops do tours in Wellington. Worth a check.

Not sure how easy it is to find/get one, nor the cost, but I think you can get tours to Antarctica. If possible it's definitely a chance to visit somewhere most people will never go.
