I secretly want to ditch this setup and just go for 1 ultrawide monitor because tri-monitor is a pain in the ass

do it and keep one of your current monitors as a secondary

I was going to sell my older monitor once i got my ultrawide - thinking the extra screen space could replace a dual setup completely - but having steam, chrome, spotify etc readily available on the secondary while playing games on the primary is super convenient. The only complaint i have is when a game doesn't support 21:9 at all and you have to deal with all that extra space not being used bc the game plays in 16:9, or when the game can run it but the hud is displayed as if it's still a 16:9 and as such cramped in the center of the screen (although i was able to work around this for fallout 4)
