The middle east has done worse and we don't put sanctions on them for that.
Why is this, you might ask?

Also because we don't want to piss off what few allies we have there (Turkey and the Armenian genocide, for example).

Yes, Article 5 of the Treaty states that an attack on any of the member states is considered an attack on all of the member states.

any attack by NK would have to be nuclear

combining this with article 5 and the fact that the US is the brunt of NATO... yeah, NATO would without a doubt get involved

at this point the only thing i believe the west can do is a war of diplomatic attrition until a west-friendly ruler takes the reigns of north korea or until a successful revolution occurs

Give it time. It's impossible for North Korea to survive without its trade network. Economic pressure will prevail.

The middle east has done worse and we don't put sanctions on them for that.
Except when we did, for Iraq and Iran. Saudi Arabia is special cause they're our freedom buddies that happen to also crucify and decapitate political dissidents.
