Think about it

We're only mortal because we understand what death is and we fear it. We have the concept of mortality which makes us mortal in our minds.

Animals dont understand death, they just live to survive. Sure they can sense danger and feel fear, but they dont understand death at all. In their minds life just goes on indefinitely

Animals live forever in their minds and dont die because they dont believe in death. We like to think of ourselves as gods but its time we realize who the true gods are.

Wrong, some animals are actually aware of what death is but only when it's shown in front of them.

When a dog sees another dog is dead they know it's dead they don't think it's sleeping.

A dog also knows when their master is dead.

That's not how mortality works.
Mortality concerns life and death, and you don't need to be sentient to live or die.

There was also a study done where a rat had to press a lever to get food but the other rat was getting electrocuted in the process.

That rat sensed the rat was getting hurt and knew that it could die from that lever.

There's no such thing as "mentally dying", as dying is a physical thing.
Animals can't understand that they are dead, but neither can humans. You can't understand that you are dead because by the nature of being dead you aren't alive to understand or be aware of anything.
The only way this can't be true is if there is an immortal soul that lives on after the death of the body.

As for whether animals are aware of their own mortality it would seem that they are as many animals engage in practices when dying, such as hiding in warm secluded places. This may be evidence of just some instinct for self-preservation rather than awareness of approaching death, but that seems difficult to prove one way or the other.
