also, since colors we perceive are reflections off of objects, then that means that the object has absorbed all the other colors that hit it, meaning that the color that we perceive objects are the only color which that object is not

I think his point is two-fold; Part A that the sky is itself just reflecting light that bounces off water which is what gives it the blue-colour and so the sky could theoretically become any colour depending on what is in the environment for light to bounce off, and Part B is that light/colour is down to an individual's perception based on their physical eyesight and how their brain processes information, as we know from people who have colour-blindness or those who can see wider spectrums of colour.Of course, Tony would never bother explaining his point to us mere mortals.
