this is a fact. we invented maths and our units of time. it's assumed that all unmentioned variables (nearby mass, velocity of object measuring time, etc) are the same when we measure the hour and when we measure the 60 minutes. it's not arrogance, it's just simply how units work.
if you're talking about theories and hypotheses being treated as fact, then i fully agree with you. however, note that no respectable scientist denies that the leading theories *could* be wrong.
Just think of our science stuff as drawings on a paper. Everything that we do and test only works on the sheet of paper we exist in, so to assume that these apply to everything else makes you automatically incorrect.
are you talking about the multiverse hypothesis? the one with infinite universes?
Our simulations could be all incorrect because after a certain size molecules yield different results.

Our earth may appear round and we can simulate and test that its round, but in the end we'll never know if it is actually round. It could be square and light just warps it to be round.

the earth gravitates like a round object, looks like a round object, and is physically shaped like a round object. because the idea of roundness is our own, we can pretty easily say "the earth is round".
there may be other factors at play involving why it's round or what shape it one day may become, but in its current state it is provably round.
and before you attempt a rebuttal using the "it's too bumpy/ovally" argument, note that the definition of round accounts for approximations.Theres infinite possibilities for stuff to go wrong. These people who believe in the earth being flat are neither wrong or right. They're just believers. Of course, they have much less credibility than everyone else.

it's like if i said you're literally dead rn. i'd be wrong. life is a defined thing - just like roundness - and we
can judge whether or not something is alive... or round.
