The buttons are confusing at first but I got the hang of them. It also lags hard for me when there's alot of them. What do?

You mean simulation FPS? Yeah, the more cells you have the slower it runs. You can get like 5000 FPS with 1000 cells, or like 120 FPS with 10000 cells.
If you want to run a faster simulation with less cells, try reducing the map size or food regrowth rate.
