Except apparently you didn't interpret the definition wrong. Merriam-Webster didn't really write a good definition. In a simile the two words are similar, but not two things you'd usually compare.

What I was saying is that bitterness is not a desirable aspect in cheese, and so it wouldn't be 'savored.'
