Maybe a limited supply of tries (Ammo) for seekers so that they don't just shoot every object in an attempt to find the hidders. But great idea, this would be a nice alternative to DMs and Zombie mini's.

you could disguise as bricks and hide. It'd be like Prop Hunt, a GMod Game. The Hunters, or seekers, would get a time limit in which they are blinded for X seconds (usually 1 minute) while the props, or hiders, find a brick to be and disguise and hide as it.

DO THIS. It actually sounds quite easy to do, considering that the brick model is already made, so all you have to do is edit the script

Brick model isn't a .DTS, someone would have to remake one as .DTS file.

It's possibly, but as Thorax said, you'd have to replicate everything you'd like to turn into (eg. 2x1). That might take some time / cause extra downloads.
