I'm making a ridable, play-as-able, dragon for my medieval rpg...what joints should i put on it?And where?And names?

And, how do I make it so when you click while riding the dragon, its mouth opens, and it "breaths" a flamethrower fire thing.And then closes when you stop clicking(holding?).

If you need help modeling, and your using blend, go to DarkStar's tutorial; Or just have DarkStar or Army Unit do it for you. Also, (this is all I know that well) were you want fire to come out of, just make a joint/armature, put were the mouth is, and call it muzzlePoint.
