I think you should, for medium, do a build such as a boat or a furnished building. Both more complex builds.

Great Idea

I got an idea for HARD.
A bigger build like a rounded thing or with a complex roof. Possibly a slight intro into eventing such as doors or a secret passage!

Perhaps you could enlist help? Can you host a server?
