Eyes don't view two different things, they view the same point from two angles, then put the images together in your brain to form depth (this is also how 3-D glasses work). Since you can only view one point, people tend to shift their gaze to avoid staring. When talking to people, it's usually shifting from eye to eye or foreground to background.
