Okay, so there are two possibilities here depending on where I am when the outbreak, or apocalypse begins.
The first is that I am at my university in Ceredigion, Wales.
The second is that I am home in Devon, England. I'm not going to write this one just yet though.
University
First thing I do is attempt to make contact with my family, try and find out if they are safe.
I will not be attempting to reach them, despite wanting to. In order to reach them I would have to travel to the South Coast of Wales, which has a high density population (therefore dangerous), and then try to get a boat to take me across the Bristol Channel, which could be risky given I have no boating experience. OR, I would have to travel to them by car (which I don't know how to drive) or by walking, which would take a significant amount of time and take me through multiple cities with millions of inhabitants, as well as the likely congested and disastrous motorways.
Supplies
Next, I take the time to gather supplies.
My university is in a very rural area, far away from nearby cities, with a small population. It wouldn't be illogical that the zombie infection has yet to reach here by the time we're in a state of emergency.
As such I stockpile dried foods from the local supermarkets, as well as water and other essential items.
There is a hunting shop in the town where I would try to get weaponry from, both archery equipment and guns/ammunition. They have shotguns at the least.
Furthermore, my university has its own armoury of weapons for the various reenactment, archery and swordfighting societies. I would try to gain access to this.
We have a doctors clinic just off campus which we could gather medical supplies from, as well as the local pharmacy.
Being a university, we also have our own Student Bar, which has significan amounts of alcohol, as well as several pubs with their own supplies. We can use these for disinfectants, as well as use as weaponry (molotovs, for example, although dangerous to use).
Base of Operations
My university is a particularly open area, with buildings scattered about. However there is one central building of significant size, made of 19th century brickwork and design. It's easily defendable. I believe it would be possible to create a base for ourselves. It has access to all sorts of equipment for the likes of cooking, healthcare, construction, education, etc..
The high walls of the building would provide good locations for ramparts and watchposts too.
If we were ever besieged within, it also has it's own defendable rooms with heavy wooden doors, namely our hall (which is actually quite small) and our University Chapel.
I've also been told we have a small network of cellars and underground tunnels, but I don't know where these go to or what entrances there are to them.
We have a river that runs through the campus, detached from the main building, but close to our other buildings (less than 2 minutes walk away), which we could build simple hydroelectric turbines on, providing us with power.
Furthermore, the river will provide a constant source of water. Our archaeology labs have the materials to allow us to filter this water too, which will be good for us.
Our building has an open space which could easily be converted to allow for gardening. If we can extend our control further out, our campus has large playing fields which can be converted to allotments for food.
Given our location in rural Wales we are nearby to many local sheep farms, which we could exploit, by taking sheep and rams and breeding our own. Local knowledge would be crucial here. We could have access to some meat, but would definitely benefit from wool, necessary for clothing and warmth in the winter, but also decent for bandages.
The campus has access to several vehicles, the majority of which are vans. Unfortunately I believe they're all petrol, which means we would have to gather and secure it safely. But we would be capable of driving to the nearby towns/villages and gathering supplies and bringing them back.
Our biggest difficulty would be securing the campus grounds as whole. One side of our campus is protected by a high wall and steel fences. However all other sides are protected only by low brick/stone walls and hedges. We would need to produce our own defences along these areas.
Directly outside most of these areas is either field, which is good as we have a good line of sight, but in other areas we have forests. We would have to clear some of these areas, perhaps using the wood to produce defences and walls.
We have several woods nearby which can also be used for a supply of wood, both for fortifications and construction, but also as a fuel source for cooking, heating and boiling of water for sterilisation purposes.
Perhaps our biggest danger is having enough food to survive a winter, although dried food should server us well. But we'd eventually have to travel further out to maintain sizable stocks.
More dangerous though would likely be the local populace, which is around 600-1000 strong, compared to 600 students (provided all or most of them stay). The town as a whole would likely be impossible to fortify and defend, while the total town-population (including students) would be far far too much for the university to and supplies to accomodate for long.
Means of escape
Should the university fall, we do have multiple exit routes, including the surrounding fields, forests (dangerous) and roads (very dangerous).
In addition to that however we could attempt to navigate down the river. At it's location in our campus it is not particularly wide or deep, and is overgrown as it heads out of the campus. We would have to clean this up, possibly deepen the river (almost certainly for construction of a watermill), before we could get a craft down it.
However, outside of the campus at the far side of town, perhaps 10 minutes walk or less, the river is more open, wider, and flows through fields (so is mostly unimpeded), but still relatively shallow.
It could be possible to escape via the river, which leads to the sea.
It does pass through some more heavily populated towns however.
Our main means would likely be escape by vehicle, using the vans to escape with several individuals and supplies. We couldn't take many however. We have but one mini-bus that can hold 20 odd.
Summary
It would be possible for the student population, in the several hundreds, to fortify the university with fair ease.
However, we would be reliant on letting in some locals to provide skills and knowledge, particularly in construction and farming, as our university primarily teaches the humanities.
We could hold the ground quite well, and being rural would likely not face significant threats from zombies.
Instead humans would be a bigger danger, likely our immediate locals, if not travellers from outside.
Guns are sparse, but could be used for defense.
Our big worry however is all about numbers.
If we have few people (50 most), we might not be capable of fortifying such a large area, particularly with so many locals. We would however be more capable of escaping if necessary.
If we have more people, in the few hundreds, we could fortify the land easily and keep our campus running as is. However, we would have bigger issues regarding food supply, and be at threat of infection.
And should we need to escape, it would be impossible for us to survive as a group. We could devolve to infighting easily too.
